Remember when I went out for my Birthday Brunch and had that delicious goat cheese, fig jam, arugula & pistachio pizza? Well I loved it so much that I made one at home I will post it soon. You can tell I enjoyed it because I took the idea and added it to my sweet potato. I love boring "diet food" said no one ever. For the record I don't "diet" but I do what is called "Flexible dieting" were you eat with in your Macros another post for that is coming soon too. So here is my super easy and healthy sweat potato, the whole meal pictured above was only about 392 calories. Step 1:Wash and cut a large sweet potato in half then wet it. Poke it all over, place in a microwave safe dish and heat(cook) for 3 minutes. Step 2.Mash sweet potato with fork. Add salt and pepper then mash more, this helps mix salt and pepper. Step 3.Add desired amount of herbed goat cheese and fig butter (jam) I got both at Trader Joe's. Microwave for another 1-2 minutes to melt cheese and blend fig butter together. Step 5.Serve! This goes great with just about every thing. I think I had it every day for about a week. |
